Grab Chris Harrison? Yes,  we have a cut out of Chris for Monday Nights. 

Light your candles because it’s Monday night!

Our gals group loves bachelor Monday and we love to make a fuss. We need candles, wine, Champagne, roses, and a special pasta dish, yummy snack or cheeseboard. For us this night is all about having some fun girls time and it just starts our week off so fun. We finally look forward to Monday!

 I’d do a romantic cozy board with all my favourite girly snacks. So I made bruschetta and pesto and paired it up with fresh mozzarella, herbed cheese spread, olive oil, balsamic vinegar, and a little fruit. 

Bruschetta 

I love using cherry tomatoes and with this recipe I never really measure anything it’s all by feel. 

Directions: 

-loosely chop cherry tomatoes approx 1 cup

-mince 3-4 garlic cloves

-chop fresh basil I love basil so I use 4-5 big leaves ( Fresh basil is the only way to go!)

-drizzle with olive oil and balsamic vinegar

Pesto 

Ok this is the best part! I actually can’t eat bruschetta without pesto! I slice a couple different breads and I start with spreading the pesto on the bread and then I top it with the bruschetta! It’s the absolute best. 

Directions:

-In a food processor blend 2 cups of basil, 3-5 garlic cloves (I love garlic) , 1/2 cup of olive oil, 1/2 cup of parmesan cheese and  1/4 pine nuts 

-I blend it to be a little lumpy and not too smooth.
